Light vs Medium vs Dark Roast: what’s the difference?
Roast level shapes almost everything you taste in a cup: acidity, sweetness, body and bitterness. Here is how light, medium and dark roasts compare, which brew methods suit each, the truth about roast and caffeine, and how MR JADE’s own specialty roast fits in.

What is the difference between light, medium and dark roast coffee?
Light roast is roasted for the shortest time and tastes bright, fruity and acidic. Medium roast is balanced, with sweetness, caramel and nutty notes. Dark roast is roasted longest and tastes bold, smoky and bittersweet, with less acidity and a heavier body. Caffeine is very similar across roasts; the real difference is flavour.
Lighter roasts tend to shine in filter coffee such as a V60, while medium and darker roasts are popular for espresso and milk drinks.
| Light | Medium | Dark | |
|---|---|---|---|
| Colour | Light brown, dry surface | Medium brown, mostly dry | Dark brown to near black, often oily |
| Acidity | High, bright | Medium | Low |
| Body | Light, tea-like | Medium, rounded | Full, heavy |
| Typical flavours | Fruit, citrus, floral | Caramel, nuts, milk chocolate | Dark chocolate, smoke, toast |
| Bitterness | Low | Moderate | Higher |
| Origin character | Most noticeable | Balanced with roast | Roast flavours dominate |
| Best for | V60 and filter | Espresso, filter, milk drinks | Espresso with milk, strong black coffee |
There is no single industry standard for roast names, so one roaster’s “medium” can be another’s “light”. Use taste and colour as your guide.
What roasting actually does to a bean.
Raw coffee beans are green, hard and grassy, and taste nothing like coffee. Roasting transforms them through heat: water evaporates, sugars caramelise and hundreds of aroma compounds form. The longer and hotter the roast, the more the bean’s natural character gives way to flavours created by the roast itself.
Drying
The beans lose moisture and turn from green to yellow, releasing a hay-like smell.
Browning
Sugars and amino acids react (the Maillard reaction), creating colour and savoury, sweet aromas.
First crack
The beans audibly pop as steam escapes. Light roasts are usually finished soon after this point.
Second crack
A quieter crackle as the bean structure breaks down. Dark roasts go into or past this stage, and oils rise to the surface.
What each roast tastes like.
Think of roast level as a dial between the bean and the fire. Turn it toward light and you taste where the coffee came from. Turn it toward dark and you taste how it was roasted.
Light roast
Bright, juicy and complex. Expect fruit, citrus or floral notes and a lively acidity. Popular in specialty cafés for showing off a bean’s character, especially in pour-over.
Medium roast
The crowd-pleaser. Sweet and balanced, with caramel, nut and milk-chocolate notes. Works in almost every brew method and with or without milk.
Medium-dark roast
Richer and heavier, with bittersweet chocolate and a little spice. A classic choice for espresso that has to cut through milk.
Dark roast
Bold, smoky and low in acidity, with a heavy body. Roast flavour leads, and the finish can be bittersweet.
Does dark roast have more caffeine?
No. Roasting barely changes the amount of caffeine in a bean. The difference people talk about comes from how coffee is measured. Dark beans lose more water and mass, so they are lighter and puffier: measured by the scoop, light roast can carry slightly more caffeine; measured by weight, the roasts are almost identical. What really sets caffeine in your cup is the dose and, in espresso drinks, the number of shots. See our coffee caffeine chart.
“Strong” is flavour
Dark roast tastes stronger because of its bold, bitter flavours, not because of extra caffeine.
By the scoop
Light roast is denser, so a scoop holds a little more coffee and a touch more caffeine.
By weight
Weighed on a scale, light and dark are practically the same.
What matters most
The amount of coffee used and the number of espresso shots in the cup.
Which roast for which brew?
Brew methods extract coffee differently, so some roasts suit some methods better. These are general pairings, not rules; a good roaster can make any roast work beautifully. Compare the drinks themselves in americano vs espresso and flat white vs latte vs cappuccino.
| Brew method | Common roast choice | Why |
|---|---|---|
| V60 pour-over | Light to medium | Clean, slow extraction highlights fruit and clarity |
| Espresso | Medium to medium-dark | Sweetness and body balance a concentrated shot |
| Milk drinks (latte, flat white) | Medium to dark | Chocolatey, bold notes come through the milk |
| Turkish coffee | Often medium to dark | A full body suits the very fine grind and slow preparation |
| Cold brew | Medium to dark | Long steeping brings out smooth, chocolatey, low-acid flavours |
MR JADE’s own specialty roast.
The coffee at MR JADE is our own specialty roast, rooted in a roasting tradition passed down from Jade Sen’s grandfather. That heritage is the thread running through our espresso drinks, our hand-brewed V60 and our Turkish coffee. Read more about the family behind it in our story and the man behind the vision. | Espresso | The purest way to taste the roast: single or double |
|---|---|
| V60 Filter | Hand-brewed for clarity and aroma |
| Americano | Two shots lengthened with hot water |
| Flat White | Double espresso with silky milk, 8 oz |
| Spanish Latte | Our roast with sweetened condensed milk |
| Dark Mocha | Espresso with Belgian chocolate and steamed milk |
Which roast is right for you?
Start with what you already enjoy, then use this guide to explore. Pairing your roast with the right milk helps too; see oat vs coconut vs dairy milk.
You like it black and bright
Lighter roasts in a V60. Look for fruity, juicy notes and drink it slowly as it cools.
You want sweet and balanced
Medium roast works for almost everything, black or with milk.
You love a milky latte
Medium-dark to dark: chocolatey notes punch through the milk.
You find coffee too sour
Go darker. Lower acidity and a rounder, bittersweet taste.
You find coffee too bitter
Go lighter, or add milk. Bitterness often comes from very dark roasts or over-extraction.
You prefer matcha energy
No roast involved at all; try organic Japanese matcha from Kyoto. See matcha vs coffee.
Four roast myths, cleared up.
Roast level is one of the most misunderstood parts of coffee. These are the claims we hear most often at the bar.
| “Dark roast is stronger.” | Only in flavour. Caffeine is about the same. |
|---|---|
| “Light roast is under-roasted.” | Not when done well. It is a deliberate style to highlight the bean. |
| “Espresso is a type of roast.” | No. Espresso is a brew method; any roast can be made into espresso. |
| “Oily beans are fresher.” | Oil on the surface usually signals a darker roast, not freshness. |

Coffee roasts: your questions
Short answers before you order.
What is the difference between light and dark roast coffee?
Light roast is roasted for less time and tastes bright, fruity and acidic. Dark roast is roasted longer and tastes bold, smoky and less acidic, with a heavier body.
Which roast has the most caffeine?
They are nearly the same. By the scoop, light roast can have slightly more because the beans are denser; by weight, the difference is negligible.
Is dark roast stronger than light roast?
Only in flavour. Dark roast tastes bolder and more bitter, but it does not contain more caffeine.
Which roast is best for espresso?
Medium to medium-dark roasts are the most common choice, because their sweetness and body balance a concentrated shot, but any roast can be used.
Which roast is best for pour-over or V60?
Light to medium roasts usually shine in a V60, where the clean extraction highlights fruit and clarity.
Is medium roast the most popular?
Medium roast is a common crowd-pleaser because it balances sweetness, acidity and body and works with or without milk.
Why are some coffee beans oily?
Longer, darker roasting pushes oils to the surface of the bean. Oily beans usually indicate a darker roast, not freshness.
Does roast level affect how healthy coffee is?
Only slightly. Lighter roasts keep a little more of some antioxidants, while darker roasts are often easier on sensitive stomachs because they are less acidic.
What roast does MR JADE use?
MR JADE serves its own specialty roast, rooted in Jade Sen’s grandfather’s roasting tradition. Ask the barista about the coffee in today’s cup.
